Pumpkins are incredibly healthy, low in calories, and high in vitamin A. The orange vegetable includes lots of antioxidants, which can lower your risk of developing chronic illnesses, and the presence of lutein and vitamin A may help to preserve your eyes. 

There are so many recipes you can try. Everyone heard about Pumpkin Latte, have not you? But there are so many other delicious meals you could try cooking at home. For example, pumpkin porridge, sauce for pasta, stew with oranges baked in the oven, cookies, and cupcakes. Well, imagination is limitless.
But today I picked one special Italian recipe. Pasta with pumpkin! Let’s get started!

Ingredients
  

  • 200 gr pumpkin
  • 1 lemon
  • 3 tbsp oil
  • 1 clove garlic
  • black pepper
  • salt
  • parsley
  • 100 ml salted water
  • 300 gr pasta
  • 2 tbsp milk cream

Instructions
 

  • Wash and peel the pumpkin.
  • Cut into cubes.
  • Pour a little oil into a heated pan, add black pepper and put a clove of garlic.
  • Remove the garlic after 2 minutes and pour the pumpkin cubes.
  • Chop and add parsley.
  • Pour water.
  • Add cream.
  • Meanwhile, cook the pasta.
  • When the pumpkin is cooked, grind it with a blender.
  • Add a little bit of lemon juice.
  • Mix and place on a serving plate.

When you cook the pumpkin, do not pour too much water. We suggest using ricotta cheese instead of milk cream and broth instead of water. You can add rosemary for a better smell, but remove it before grinding.
