How to make stuffed peppers with meat and rice
Preparation of pepper
First of all, do not forget to wash each pepper. Use a knife to make an incision around the stalk, then pull on it, slightly scrolling the core inside the pepper. Turn the vegetables upside down and tap them vigorously on the table several times to remove the remaining seeds.
Preparation of rice
Rinse the rice with water several times to get rid of the starch. Pour boiling salted water over rice. This will allow it to swell and become softer, which is what we need.
Add vegetable oil to the pan. Chop the onion very finely. Fry onions in a pan with vegetable oil. Onions should be cut into small pieces. Also, add finely chopped garlic to the pan with the onions. Grate carrots on a grater. Pour it over the onion when it is lightly fried, and add a little salt and pepper to taste.
Divide the vegetable roast into two halves. Add one part to the minced meat, the other – leave in the pan. Thoroughly mix the minced meat with roasted vegetables, and add spices and rice. Rice water must be drained before spreading rice in minced meat. Fill the bell peppers with meat filling so that there are no voids in the middle of the pepper. At the bottom of the pan, we spread the second part of our roast, which we left in the pan, and put the peppers on it.
Sauce (2 options)
1. Mix tomato juice with sour cream and add salt and pepper.
2. Mix sour cream and tomato paste, and add salt and pepper. Pour 200 ml of water.
Pour the sauce into a saucepan with peppers. You can pour each pepper on top. Then fill the pan with water so that it almost covers the pepper. Cook over medium heat until boiling. After the liquid begins to boil, cook for another 30 minutes on medium heat.
How to serve stuffed peppers with meat and rice
Before serving, remove the peppers from the plate and leave them under the lid for 10-20 minutes so that they are completely soaked in the sauce and become even tastier and more fragrant.
