Lemon cookies

I share a heartwarming recipe infused with the essence of these cherished moments. This delightful treat, with its lemony allure, becomes a symbol of slowing down, finding comfort in familiar rituals, and appreciating the magic within the ordinary.

Ingredients
  

  • 75g sugar
  • 75g flour for pastry
  • 1 tsp vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 tbsp backing powder
  • pinch of salt to taste
  • 50g starch
  • zest of 2 lemons
  • juice of 1/2 lemon

Instructions
 

  • Pour the sugar into a bowl, remove the zest from the lemons and mix everything thoroughly
  • Melt the butter and pour it. Add the eggs, making sure that the melted butter is not hot so that the eggs does not cook. Add the vanilla extract, backing powder and lemon juice.
  • Gradually sift the flour through a sieve and knead the dough. Put it in the refrigerator so that it hardens a little and the cookies are more crispy
  • Form balls from the dough and roll in powdered sugar
